Study on Analysis of Fatty Acid Composition in Germinated Soybean oil G. L. Chromatographic Behavior of their Fatty Acids

Abstract

|
The Gas-Liquid chromatograms of fatty acids in germinated soybean oil were investigated. The main component of fatty acids were found to be palmitic acid 11.2% ; stearic acid 2.8% ; oleic acid, 23.8% ; linoleic acid, 55.8% and linolenic acid, 6.7% ; as the average values of four samples of germinating soybeans respectvely. In the germination of soybeans the increased contents of the unsaturated fatty acids were found to be about 2% by weight.
